What's The Big Idea?

Nice and simple cake/dessert. Reputedly this tastes better after a day or two, once the flavours have had a chance to "combine" a little.

Shopping List

Here's the list of what you need:

  • 6½oz plain flour, plus an additional 2 tablespoons
  • 2oz white sugar (caster sugar)
  • ¼ teaspoon salt
  • 2 teaspoons baking powder
  • 4oz unslated butter or margarine, plus an additional 2 tablespoons
  • 1 egg, beaten
  • 3 fl oz single cream
  • 4 large eating apples - peeled, cored and thinly sliced
  • 4oz soft brown sugar
  • 2 teaspoons ground cinnamon

What To Do

  • Preheat oven to 375F/190C. Lightly grease an 8 inch square baking dish
  • Sift together 6½oz plain flour, the caster sugar, salt, and baking powder
  • Rub in 4oz of butter until the mixture is crumbly
  • Stir together the egg with the cream and gently mix into the flour until a soft dough has formed
  • Press into prepared baking dish. Layer the apples on top of the dough, in neat rows
  • Prepare the topping by mixing the brown sugar, 2 tablespoons flour, and cinnamon together in a small bowl
  • Rub in 2 tablespoons butter until the mixture is crumbly. Sprinkle over the apples
  • Bake in the preheated oven until the apples have softened, and the topping has browned, about 25-30 minutes
