Russian Gingerbread - Pryaniki

What's The Big Idea?

Sweetened with honey and flavoured with warming spices, traditional pryaniki is dense, spicy and chewy. They are often cut into many shapes and are even stamped with a wooden press to produce a design on the surface. Perfect with a hot cup of tea!

Shopping List

Here's the list of what you need:

  • 1oz butter
  • 6oz honey
  • 6oz plum jam
  • 1 egg
  • 8oz plain flour
  • 2oz icing sugar
  • ¼ teaspoon baking soda
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • 1 tablespoon crushed almonds
  • 2 tablespoons lemon juice

What To Do

  • Preheat the oven to 175C / 350F
  • Cream together the butter and honey. Then add the egg and beat well
  • Blend in the baking soda, spices and almonds
  • Add enough flour to make a soft dough. Cover and refrigerate for 1 hour
  • Roll out the dough on a lightly floured surface until it is about an eighth of an inch thick
  • With a 2-3 inch cutter, cut circles out of the dough
  • Cut each circle in half. Spread half of the semi-circles with jam and place the other half on top. Seal the edges
  • Place on a greased baking sheet and bake for 10 minutes
  • Reduce the oven heat to 325 F and bake for 10 more minutes
  • Cool on a wire rack. Combine the lemon juice and icing sugar, drizzle over the cooled cakes
