Romanian Devilled Eggs:

What's the big idea?

A very popular Romanian starter. If preparing them in advance, store in the refrigerator until you are ready to eat.

Shopping List

Here's the list of what you need:

  • 12 eggs
  • 1 small onion, grated
  • 60ml mayonnaise
  • 2 tablespoons mustard*
  • 1-2 teaspoons paprika
  • ½ teaspoon cayenne pepper
  • Salt and pepper
* Any mustard will do, but a popular version would be horseradish mustard, if you are able to obtain some

What To Do

  • Place the eggs in a large saucepan, with just enough cold water to cover them
  • Bring the water to the boil over a medium-high flame, and allow the eggs to boil for 10 minutes
  • Drain the water from the saucepan and run cool water over the eggs
  • Set aside until completely cooled
  • Once cooled, remove the eggs from their shells and slice them in half length-wise
  • Scoop out the yolks and place them in a small bowl
  • Mash the egg yolks and add all the remaining ingredients. Mix well
  • Stuff the egg whites with the yolk mixture and add a sprinkle of paprika on top
  • Serve cold
