Romanian Apple Cake

What's the big idea?

A tasty and traditional Romanian apple cake. Serve warm straight from the oven. If there's any left, store in the refrigerator.

Shopping List

Here's the list of what you need:

  • 5 apples, peeled and cored *
  • 3 eggs
  • 12oz white granulated sugar
  • 175ml vegetable oil **
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 tablespoon vanilla extract
  • 8oz plain flour
  • 3oz chopped walnuts
* Any combination of apples works, I tried 1 large cooking apple - e.g. Bramley - and 4 eating apples
** I tried corn oil and it seemed to work OK

What To Do

  • Preheat oven to 350F/175C
  • Grease and flour a 9x13 inch baking tin
  • Cut the apples into 1 inch wedges. Set aside
  • In a large bowl, whisk together the eggs and sugar until blended. Mix in the baking soda, oil, cinnamon and vanilla
  • Stir in the flour, and gently fold in the apples and walnuts
  • Pour this cake mixture into the prepared tin. Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of the cake comes out clean
  • Allow to cool slightly
