Polish Plum Cake:

What's The Big Idea?

As well as hearty warming soups and stews, Polish cooking features many cakes and pastries and so we just had to include at least one! The combination of the sweetness of the cake with the slightly sharp plums works really well - just fantastic as you settle down with a cup of strong coffee to watch the game!

Apologies to any Polish readers if I have mis-spelled the name of the cake!

Shopping List

Here's the list of what you need:

  • 9oz plain flour
  • 2½ teaspoons baking powder
  • ¾ teaspoon salt
  • 8oz caster sugar
  • 4oz soft butter, plus 3 tablespoons cold butter, cut into pieces
  • 6fl oz milk
  • 2 large eggs
  • 40 fresh plums, pitted and halved
  • ¼ teaspoon cloves
  • Icing sugar

What To Do

  • Pre-heat oven to 350F/175C
  • Lightly grease a 13"x9" baking tray
  • In large bowl, combine the flour, baking powder, salt and 6oz sugar
  • Add the softened butter, milk and eggs. Beat well until thoroughly mixed
  • Pour the batter into the prepared tin. Arrange the plums on top, cut side up, pushing down slightly into the batter
  • Rub the remaining 2oz sugar and cloves into 3 tablespoons cold butter and sprinkle over plums
  • Bake for about 40 minutes or until a wooden skewer tests clean
  • Allow the cake to cool in the pan. Dust with icing sugar, and cut into 12 squares
