Cevapcici - Balkan Burgers

What's The Big Idea?

Very much a "regional" rather than a national dish, this is typical of a style of cooking in Serbia, Montenegro and Bosnia, so you could use it if any of those nations - or teams from that region - are playing.

In common with many recipes from the region, this uses a combination of different minced (ground) meats mixed together. The result is somewhere between a sausage, a kebab and a burger, but whatever you classify them as, they taste great, either barbecued, grilled or oven cooked.

Serve with mountains of buttered mashed potato or plenty of fresh crusty bread, and the yoghurt sauce (see below).

Shopping List

Here's the list of what you need:

  • 1lb minced lamb
  • 1lb minced veal
  • 1lb minced pork
  • 1 large onion, peeled and grated
  • 4 cloves garlic, peeled and crushed
  • 3 tablespoons paprika
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon freshly ground black pepper
  • Salt to taste
  • Pinch of nutmeg
  • Olive oil for basting
  • 1 pint natural yoghurt
  • ½ cucumber, peeled, grated and left to drain for 1 hour
  • Juice of ½ lemon

What To Do

  • Mix the meats, onion, half of the garlic, spices and seasonings in a bowl. Mix thoroughly and roll the mixture into small sausages about 1 inch by 3 inches
  • Rub lightly with olive oil and grill or barbecue until cooked through
  • Meanwhile, mix together the yoghurt, remaining garlic, lemon juice and cucumber. Serve with the cevapcici
