Hungarian Stacked Pancakes:
Rakott Palacsinta

What's The Big Idea?

Palacsinta are thin pancakes. Rather than filling and rolling them individually, they are stacked with filling in between each layer to form a sort of short "tower cake".

Almost anything sweet can be used for the filling - nuts, raisins, almond paste, jams and jellies, sweetened and flavoured cream cheese... whatever you fancy really. In fact it is good to have multiple fillings. which are alternated as the pancakes are layered up to form the "tower". My children love the cream cheese and almond filling below, combined with cherry pie filling, with vanilla ice cream on the side!

This recipe makes sixteen pancakes.

Shopping List

Here's the list of what you need:

  • For the pancakes:
    • 3 large eggs, beaten
    • 8 fl oz whole milk
    • 2½ fl oz club soda
    • 2½ fl oz orange juice
    • 5½ oz plain flour
    • 2 tablespoons caster sugar
    • ½ teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 tablespoons butter
  • For the filling:
    • 8oz cream cheese
    • 2oz ground almonds
    • 3oz icing sugar
    • 1 tin of fruit pie filling of your choice
  • To decorate:
    • 1 oz dark chocolate, grated
    • 1oz icing sugar

What To Do

  • In a medium bowl, mix together the eggs, milk, club soda and orange juice. Stir in the flour, sugar, salt and vanilla to form a smooth batter
  • Heat 1 teaspoon butter in an 8-inch frying pan. Use a small ladle to add enough batter to coat the bottom of the pan in a thin, even layer
  • Cook for 2 minutes on the first side and 1½ minutes on the second side or until the pancake is lightly browned
  • Remove and keep warm while cooking the rest of the pancakes with the remaining butter and batter
  • Whip together the cream cheese, almonds and icing sugar. Spread some of this mixture over the first pancake
  • Place a second pancake on top of the first one. Spread this with the fruit pie filling
  • Continue alternating in this way until all the pancakes are stacked up
  • Sprinkle the top one with icing sugar and grated chocolate. To serve, cut into slices like a cake
