Hungarian Chicken Paprikash

What's The Big Idea?

Hearty chicken stew flavoured with two of Hungary's favourite ingredients - sour cream and paprika. Traditionally served with dumplings - these can either be cooked separately, or added to the pan late in the cooking process.

Shopping List

Here's the list of what you need:

  • 2 medium onions, chopped
  • 4 tablespoons vegetable oil or lard
  • 3 tablespoons paprika
  • Plenty of freshly ground black pepper
  • 1 teaspoon salt
  • Your choice of whole chicken portions - legs, thighs, breasts
  • ½ pint sour cream
  • 1 tablespoon cornflour

What To Do

  • Heat the oil or lard in a large flame-proof casserole or wok. Fry the onion until just browned
  • Add the paprika and chicken, and fry for 5-10 minutes until the chicken is browned all over
  • Add 12 fl oz water, season well with salt and black pepper, cover and simmer slowly until tender
  • Remove the chicken from the pan and keep warm
  • Add the sour cream to the pan and mix well. Mix the cornflour with a little cold water, and stir into the contents of the pan
  • Serve the sauce poured over the chicken, with dumplings and fresh green vegetables
