Greek Souvlaki - Grilled Marinated Pork

What's The Big Idea?

Souvlaki is a classic Greek recipe for pork, marinated in red wine and herbs, and then grilled or barbecued. It's quite a flexible dish, and as such is one that gets used at a wide variety of occasions in our household. It works as a barbecue dish, or can be cooked under a hot grill. It can be served on the skewers or not, with rice or couscous and vegetables or a salad, as a main course or part of a buffet meal. One great way of serving it is to take the cooked meat off the skewers, slice it and pack it into pitta breads with some shredded lettuce, a little tomato and perhaps a dash of mayonnaise or tomato salsa - the options are endless!

Remember to allow plenty of time for marination.

Shopping List

Here's the list of what you need:

  • 60ml olive oil
  • 60ml red wine
  • 2 tablespoons lemon juice
  • 1 tablespoon dried mint
  • 1 tablespoon dried oregano
  • 4 cloves of garlic, minced
  • 450g pork shoulder, trimmed of fat and cut into 30mm cubes
  • Salt and freshly ground black pepper
  • Skewers

What To Do

  • In a large non-reactive bowl, mix the marinade ingredients together thoroughly
  • Add the cubed pork, cover and refrigerate for 2 to 3 hours
  • Heat the grill or barbecue to medium high. Thread the meat onto the skewers. Season with salt and freshly ground black pepper
  • Grill or barbecue for about 10 minutes, turning occasionally until the meat is cooked through but not too dry
