French Parisian Onion Soup

What's The Big Idea?

French onion soup - a classic! As with every classic, there are countless variations. We like this one, but if you know a differnt recipe, use the one you prefer!

Shopping List

Here's the list of what you need:

  • 2oz unsalted butter
  • 2lb medium onions, skinned, halved and then thinly sliced
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • ¾ teaspoon salt
  • 2 teaspoons plain flour
  • 175ml dry white wine
  • 950ml beef stock
  • ½ teaspoon freshly ground black pepper
  • 6 x ½ inch thick slices of baguette
  • ½lb Gruyère or Emmental cheese
  • 2 tablespoons finely grated Parmesan

What To Do

  • Melt the butter in a heavy pot over moderate heat, and cook the onions, thyme, bay leaves and salt, uncovered, stirring frequently, for about 45 minutes
  • Add the flour and cook, stirring, for 1 minute. Stir in wine and cook, stirring, for 2 minutes
  • Stir in the stock, 350ml water, and pepper and simmer uncovered, stirring occasionally, for 30 minutes
  • Meanwhile, pre-heat the oven to 350F/175C
  • Arrange the sliced French bread in a single layer on a large baking sheet and toast in the oven, turning once, until completely dry (about 15 minutes)
  • Remove the toast from the oven and preheat the grill
  • Remove the bay leaves and thyme from the soup
  • Place a thin slice of cheese on each slice of toast, and grill until the cheese starts to melt
  • Serve the soup in individual bowls, each topped with a slice of toasted cheese
  • Sprinkle with parmesan and serve
