London Potted Shrimps

What's the big idea?

These make a great starter, and can be served in or out of their pots, whichever you prefer. Serve with warm buttered toast.

Shopping List

Here's the list of what you need:

  • 500g shrimps (prawns)
  • 150g unsalted butter
  • 1 small onion, finely chopped
  • ½ bunch chives, finely chopped
  • A good pinch of cayenne pepper
  • Worcestershire sauce to taste
  • Lemon juice to taste
  • Salt and freshly ground black pepper

What To Do

  • Melt the butter in a suitably sized saucepan, add the chopped onion and cook over a moderate heat for 3-4 minutes
  • Add the shrimps/prawns and continue to cook for a further 3-4 minutes
  • Season to taste with Worcestershire sauce, cayenne, lemon juice, salt and black pepper
  • Pack into individual moulds and refrigerate
