English Manchester Pudding

What's the big idea?

There is some debate over the origins of this dish, and confusion with a similar recipe called Manchester Tart. The main difference seems to be that the tart uses pastry as the base, whereas the pudding uses soft breadcrumbs or (as here) cake crumbs.

Shopping List

Here's the list of what you need:

  • 8oz sponge cake crumbs
  • 2oz sugar
  • 2 eggs, separated
  • 1 pint milk
  • Grated zest of 1 lemon
  • Raspberry jam

What To Do

  • Preheat the oven to 180C / 360F / Gas 4
  • Beat the milk, egg yolks and 1 oz sugar together. Stir the lemon zest into the cake crumbs and add to the egg mixture
  • Mix well and pour the mixture into a greased baking tray and bake in the oven for about 45 minutes or until the mixture is set
  • Remove from oven and spread the top with a layer of raspberry jam
  • Beat the egg whites stiffly and mix in remaning sugar. Cover the pudding with this meringue mixture
  • Return to over until meringue is coloured
