Birmingham Faggots

What's the big idea?

Faggots are an old-fashioned British food, and one that has sadly fallen out of favour in recent years. Traditionally Faggots are made from offal, usually pork; from the parts of the animal that are generally discarded, such as the heart, the liver etc, which made Faggots a cheap and nutritious dish.

Birmingham and the Midlands are considered the home of Faggots in Britain. Faggots are traditionally eaten with Mushy Peas , mashed potatoes and onion gravy. Click here for our onion gravy recipe.

Shopping List

Here's the list of what you need:

  • 4 oz pork shoulder, roughly chopped
  • 4 oz pig's liver, roughly chopped
  • 8 oz fatty belly pork, roughly choppped
  • 6 oz streaky bacon
  • 4 oz bread crumbs
  • 1 medium onion, finely chopped
  • ½ teaspoon mace
  • 1 teaspoon allspice
  • 2 tablespoons chopped parsley
  • 2 sage leaves, finely chopped
  • 1 small red chili, deseeded and finely chopped
  • Salt and Pepper

What To Do

  • Pre-heat the oven to 200C/400F/Gas 6
  • Mince the pork shoulder, liver and belly pork, and roughly half of the bacon. If you don't have a mincer, then chop in a food processor
  • Place the minced meat into a large bowl. Add the breadcrumbs, onion, herbs, spices and a pinch of salt and pepper. Mix thoroughly
  • Divide the mixture into 8 and shape into balls
  • Wrap each ball in bacon. Make sure the bacon overlaps as it will seal as it cooks and hold the faggots together
  • Place in a baking tray and bake in the oven for 50-60 minutes
