English Beef in Ale Casserole

What's the big idea?

Warming one-pot meal - great for those miserable English winter months!

Shopping List

Here's the list of what you need:

  • 2 tablespoons vegetable oil
  • 1 large onion, peeled and chopped
  • 1lb stewing beef, cubed
  • 1lb carrots, peeled and sliced
  • 1lb baby potatoes, halved
  • 400ml English ale ("dark beer")*
  • Salt and fresh black pepper
  • 300ml beef stock
  • 1 tablespoon tomato purée
  • 5oz frozen peas
  • 2 tablespoons cornflour

What To Do

  • Heat the oil in a large flameproof casserole and fry the beef for 5 minutes
  • Add the onion, carrots and potatoes. Fry for a further 3 minutes
  • Stir in the tomato purée and pour in the ale and stock
  • Bring to the boil, reduce the heat, cover and simmer for 1¼ hours
  • Season with salt and black pepper
  • Add the peas and cook for a further 10 minutes
  • Mix the cornflour with a little cold water to form a thin paste, then stir into the casserole until the juices thicken
