Danish Beef Stew with Dumplings:

What's the big idea?

Classic stew and dumplings - warming comfort food!
Serves 6

Shopping List

Here's the list of what you need:

  • 2lb (1kg) stewing beef
  • 2 tablespoons vinegar
  • 6 tablespoons (Danish) butter
  • 2 medium onions (chopped)
  • 4oz plain flour
  • ¾ pint beef stock
  • 1 teaspoon salt
  • ½ teaspoon of pepper
  • ¾ teaspoon baking powder
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon dried marjoram

What To Do

  • Place the stewing beef in a bowl. Sprinkle with the vinegar and set aside
  • Meanwhile, melt half the butter in a heavy frying pan or wok. Add the onions and fry until golden
  • Stir in 1oz flour. Gradually stir in the stock and bring slowly to the boil
  • Add the meat, half the salt and the pepper. Stir well, cover and simmer at a low heat for 2 hours
  • Sift together the baking powder, ½ teaspoon salt and 3oz of flour in a bowl
  • Add the parsley and marjoram to the bowl and mix well
  • Blend in the remaining butter with your fingers, and mix in 2 tablespoons cold water
  • Form the dough into small balls and drop into the stew. Cover and continue to cook over a low heat for a further 30-45 minutes
