Danish Grilled Salmon with Warm Salad

What's the big idea?

Traditional and straightforward dish. Serve with boiled potatoes.

Shopping List

Here's the list of what you need:

  • 1 courgette, cut into thin slices
  • ½ butternut squash, cut into 1cm cubes
  • 1 fennel bulb, cut into thin strips
  • 2 tablespoons (Danish) butter
  • 1 large salmon fillet, suitable for 4 peaople
  • Grated rind of one lemon, plus one whole lemon
  • Salt and black pepper
  • ½lb fresh spinach leaves

What To Do

  • Melt the butter in a large frying pan or wok. Fry the squash and fennel for about 10 minutes, until almost cooked
  • Add the courgettes. Fry until all the vegetables are cooked
  • Meanwhile, place the salmon on a baking tray or grill pan, skin side up. Grill for 5 minutes
  • Turn the salmon over, sprinkle with the grated rind of one lemon, and plenty of salt and black pepper
  • Grill for a further five minutes or until cooked through
  • Meanwhile, place the spinach leaves in a large serving bowl. Spoon the warm vegetables on top, and garnish with lemon wedges
  • Serve with the salmon and boiled potatoes
