Bulgarian Shopska Salad

What's The Big Idea?

This simple salad is not dissimilar to many others from the south eastern corner of Europe, e.g. Greece or Macedonia.
Some say it is traditional and its history goes back centuries, others claim it was the invention of the Bulgarian tourist board. Either way, it's simple and tasty, and makes a great starter before a meat course or barbecue.

It is traditionally made using Bulgarian sirene cheese, which is sometimes made from goats milk, but more commonly nowadays from cows milk, and as part of the production process is soaked in brine. If you can't get sirene from your delicatessen, the nearest equivalent is probably Greek feta cheese, which is widely available.

Shopping List

Here's the list of what you need:

  • 2 red peppers, seeded and quartered
  • 3 large tomatoes, sliced
  • 2 small red onions. finely sliced
  • ½ cucumber, sliced
  • A little olive oil and vinegar
  • ½lb sirene cheese (or feta), grated or diced
  • Salt and black pepper

What To Do

  • Place the peppers on a baking sheet, sprinkle lightly with olive oil, and place under a hot grill until slightly blackened
  • Arrange the peppers, cucumber, onions and tomatoes on individual plates
  • Season well with salt and black pepper. Sprinkle with a little olive oil and vinegar
  • Sprinkle the cheese over the top, and serve with fresh bread
