What's the big idea?

This is a popular Belgian dish, regarded by some as the national dish of Belgium. A hearty beef stew, serve with a crisp green salad, roasted potatoes, and a good bottle of red wine.

Shopping List

Here's the list of what you need:

  • 2lb beef, cut into 2-inch cubes
  • 2 tablespoons plain flour
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 3 medium onions, sliced
  • 1 clove garlic, minced
  • 1 tablespoon brown sugar
  • 2 teaspoons dried parsley
  • 1 bay leaf
  • ¼ teaspoon dried thyme
  • 350ml dark Belgian beer
  • 200ml beef stock
  • 1 tablespoon cider vinegar

What To Do

  • In a large bowl, toss together the beef, flour, salt, and pepper
  • Heat the oil and butter in a large saucepan and fry the beef until browned on all sides
  • Add the onions, garlic, brown sugar and herbs to the beef and stir thoroughly
  • Then stir in the beer and add enough stock to cover the beef
  • Cover, reduce the heat to low, and simmer for 1½ hours, until the beef is tender
  • Remove from the heat and stir in the cider vinegar before serving
