Japanese Cucumber & Avocado Sushi

What's The Big Idea?

Very simple vegetarian sushi. You can add some chopped cooked prawns, smoked salmon or crab meat if you like. Serve with soy sauce.

Shopping List

Here's the list of what you need:

  • 150g sushi rice (or other short grain rice)
  • 3 tablespoons rice vinegar
  • 1 pinch salt
  • 4 sheets of nori dried seaweed
  • ½ cucumber, cut into julienne strips
  • 1 avocado, peeled, stoned and sliced

What To Do

  • Place the rice in a saucepan with 300ml water and bring to the boil
  • Cover, reduce heat and simmer for 20 minutes, or until rice is tender and water has been absorbed
  • Remove from the heat and stir in the vinegar and a pinch of salt. Set aside to cool
  • Spread some of the rice evenly over one nori sheet, leaving a 1cm gap at the bottom. Arrange cucumber and avocado across the centre of the rice
  • Roll up the nori towards the exposed end of the sheet to make a long roll. Moisten with a little water to help seal
  • Set aside and continue with remaining nori sheets, rice and fillings
  • Use a sharp wet knife to slice the rolls into individual sushi pieces
