Japanese Chicken Yakitori - Grilled Chicken Kebabs

What's The Big Idea?

Very simple straightforward chicken kebab recipe. Can be done either on the barbecue or under the grill. Serve with plain rice, ideally of the short grain type if you want to keep things authentically Japanese. Remember to allow time for marinating.

Shopping List

Here's the list of what you need:

  • 3 tablespoons Japanese soy sauce
  • 3 tablespoons sake or dry sherry
  • 1 tablespoon sesame oil
  • 1 garlic clove, minced
  • 1 tablespoon fresh ginger, very finely chopped
  • 2 teaspoons clear honey
  • 1lb skinless boneless chicken breast fillets, cut into 1 inch cubes
  • 1 large green pepper, seeded and cut into ½ inch squares
  • 4 large spring onions, cut into 1 inch lengths

What To Do

  • Place all of the ingredients, except the spring onions and green pepper, in a non-metallic bowl
  • Mix well, cover and refrigerate for at least an hour, ideally overnight
  • Soak some wooden skewers in warm water for at least 10 minutes
  • Thread the marinated chicken, peppers and spring onions onto the skewers
  • Grill or barbecue, turning occasionally and basting with remaining marinade, until cooked
  • Serve at once with rice, or as part of a buffet-style meal
