Iran-style Prawn and Broccoli Salad

What's The Big Idea?

A really unusual dish to either serve at a formal dinner party or as part of a buffet-style meal. It's almost a meal in itself - all it needs is some warm crusty bread...

Shopping List

Here's the list of what you need:

  • 100g blanched almonds
  • 450g broccoli
  • 400g large prawns (shrimp), shelled and deveined, but tails left on
  • Zest of 2 lemons, plus 3 tablespoons of lemon juice
  • 1 teaspoon Harissa Paste
  • 3 tablespoons olive oil
  • 3 tablespoons clear honey
  • 75g feta cheese
  • 2 tablespoons chopped fresh dill

What To Do

  • Pre-heat the oven to 190C / 375F / Gas 5
  • Spread the almonds on a baking tray and toast for 10 minutes until golden. Set aside
  • Meanwhile, cut the broccoli into small florets and blanche in boiling salted water for about 5 minutes. Plunge into cold water, drain and set aside
  • In a large bowl, mix together the prawns (shrimp), lemon zest, harissa and half the olive oil. Set aside
  • Prepare the dressing by mixing remaining olive oil, honey and lemon juice
  • Heat a frying pan until very hot, and fry the prawns for a couple of minutes on each side until cooked through. Set aside and keep warm
  • Arrange the broccoli and prawns on a large platter. Sprinkle the almonds and feta cheese over. Mix the dressing thoroughly again, and pour over the salad
  • Finally, sprinkle with chopped dill and serve
