Honduran Stuffed Wheat Tortillas - Baleadas

What's the big idea?

Baleadas are a typical Honduran snack or street food; basically, they are thick wheat tortillas folded in half and filled with a variety of fillings (although mashed beans are always included). "Simple" baleadas are filled with mashed fried beans, sour cream and grated cheese, to which all manner of additional fillings are added, including prawns, left-over fried or roast chicken or beef, a little cooked chorizo sausage, scrambled egg, avocado, chopped tomato, diced onion, etc, etc.

Shopping List

Here's the list of what you need:

  • 8 large, thick wheat-flour tortillas
  • 2 x 400g (approx) tins refried beans
  • 2-3oz hard cheese (e.g. cheddar) grated, or crumbled feta will work
  • 100ml sour cream
  • Other (optional) ingredients:
    • 6-8 rashers grilled bacon, chopped
    • 4oz left-over fried or roast chicken, chopped
    • 4oz cooked prawns (shrimp)
    • 1-2oz cooked chorizo sausage
    • 3-4 eggs, scrambled
    • 2 red onions, finely chopped
    • 2 medium tomatoes, finely chopped
    • 2 red peppers, finely chopped
    • 2 avocados, peeled, stone removed, finely chopped
    • A dash of Tabasco Sauce
    • A few Pickled Jalapenos

What To Do

  • Prepare any of the "optional" ingredients that you wish to use
  • Gently heat the refried beans in a saucepan until hot, adding a little water if neessary
  • Heat a non-stick frying pan, and warm each of the tortillas on both sides. Do not add any oil to the pan
  • Smear some refried beans on one half of the first tortilla, and sprinkle with some grated/crumbled cheese and any of the "optional" ingredients
  • Smear the other half with sour cream and fold the tortilla in half over the filling
  • Repeat with the remaining tortillas and serve hot
