Costa Rican Chicken & Rice:
Arroz con Pollo

What's The Big Idea?

OK, "Chicken & Rice" doesn't sound exactly glamorous or complicated. Does good food have to be complicated? Not really. This is good, tasty, wholesome food that's a very popular recipe in Costa Rica. The chicken, rice and tomato-based sauce are cooked separately initially, and then combined at the end for a "one pot meal".

Shopping List

Here's the list of what you need:

  • For the Chicken:
    • 1lb chicken parts (e.g. drumsticks, thighs, breast halves)
    • 2 tablespoons vegetable oil
    • 2 cloves garlic
    • 1 stick of celery, finely chopped
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • ½ teaspoon dried oregano
    • ½ teaspoon ground cumin
  • For the Rice:
    • 1lb uncooked long grain rice
    • 2 tablespoons vegetable oil
    • 2 carrots, finely sliced
    • 1 teaspoon paprika
    • Salt to taste
    • 8oz frozen peas
  • For the Sauce:
    • 1 medium onion, finely chopped
    • 1 red bell pepper, finely chopped
    • 1 large ripe tomato, finely chopped
    • 2 tablespoons fresh coriander, finely chopped
    • Tabasco sauce - to taste (optional)
    • 4 tablespoonsn tomato purée

What To Do

  • To cook the chicken, heat the vegetable oil in a wok over medium high. Add the chicken, salt, pepper, garlic, oregano, cumin, and celery
  • Stir fry until the chicken is golden brown all over. Remove from the heat and set aside
  • To cook the rice, heat the vegetable oil in a heavy saucepan over medium heat. Add the rice and cook, stirring frequently, for 5 minutes
  • Add the carrots, paprika, and salt
  • Add sufficient water to cover. Bring to the boil over a medium-high heat. Cover and simmer until the rice is tender, adding more water if needed
  • Remove from the heat and leave the rice in the saucepan, covered, for 10 minutes. Drain off any excess water after this time
  • For the sauce, fry the onion, red pepper, tomato, and coriander in a saucepan over a medium heat for 5 miutes
  • Add the tomato purée and stir until the sauce is ready. Season with salt and Tabasco sauce (if using)
  • Combine the chicken and sauce in a saucepan over low heat for 2 minutes. Stir in the rice and peas. Cover and cook for 5 minutes. Serve
