Colombian Grilled Steak:
Carne Asada

What's The Big Idea?

Grilled or barbecued steak is popular in Colombia, especially in the big cities and the areas of open plains. It is typically marinated in the way described below, and then eaten with warm breads, or rice and sweet corn. A bowl of Colombian Hot Sauce - Aji Picante is always on the table for those who like it with their steak.

Remember to allow time for marinating.

Shopping List

Here's the list of what you need:

  • 4 steaks of your choice
  • 4 tablespoons vegetable oil
  • ½ bottle of beer
  • 120ml orange juice
  • Juice of 3 limes
  • 4 cloves of garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Worcestershire sauce
  • 1½ teaspoons ground cumin
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground coriander
  • ½ teaspoon dried oregano

What To Do

  • Whisk together the vegetable oil, beer, orange juice, lime juice, vinegar and Worcestershire sauce
  • Mix in all the remaining marinade ingredients
  • Place the steaks inside a sealable plastic bag, and pour in the marinade. Seal the bag tightly, and leave to marinate overnight in the refrigerator
  • Heat the grill or barbecue to medium high. Remove the steak from the marinade and grill for 5-8 minutes on each side, or until cooked to your liking
  • Let the steak rest for 5 minutes, then slice very thinly against the grain and serve
