Brazilian Style Rice

What's the big idea?

Rice is very much a staple foodstuff in Brazil, and in many regions is served with virtually every meal. Certainly if you're having a Brazilian dinner party or barbecue, this recipe is an essential accompaniement.

Shopping List

Here's the list of what you need:

  • 8oz basmati rice (uncooked)
  • 1½ tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon salt

What To Do

  • Wash the rice thoroughly until the water runs clear. Set aside to dry
  • Place a wok or similar pan over a medium heat and add the olive oil
  • Fry the onions and garlic for about 3 minutes
  • Add the rice and stir-fry for an additional 3-4 minutes, making sure that the rice does not stick to the bottom of the pan
  • Add the salt and 475ml of boiling water to the rice. Place a lid on the wok and cook on medium heat for 8 minutes
  • Reduce the heat to low and cook for another 10-15 minutes, or until the water has all evaporated. If the rice is not cooked yet, add a little bit more water
