Zambian Chicken & Peanut Stew

What's the big idea?

This would traditionally be served as an accompaniement to the ever-present nshima (or nsima), a sort of porridge made from ground maize. You can substitute mashed potato or even rice, which is eaten in Zambia too - it's just not as universally popular as nshima.

Shopping List

Here's the list of what you need:

  • 2 tablespoons vegetable oil
  • 1lb cubed chicken meat
  • 1 medium onion, chopped
  • 1 large tomato, finely chopped/diced
  • 2 tablespoons tomato purée
  • Salt and pepper
  • 8fl oz milk
  • Pinch of cayenne pepper
  • 1lb peanut butter

What To Do

  • Heat the oil in a large frying pan and fry the chicken until browned on all sides
  • Add the onion, tomato, tomato purée, milk, salt, pepper and cayenne pepper to the pan
  • Simmer for half an hour. Add the peanut butter
  • Simmer until the sauce has thickened
  • Serve with rice or nshima
