Ghanaian Prawn Skewers

What's the big idea?

Very simple, straightforward and easy to prepare dish. Serve with mashed potato, mashed sweet potato or rice, and steamed spinach.

Shopping List

Here's the list of what you need:

  • 2lbs fresh peeled jumbo prawns, cleaned
  • 4 tablespoons lemon juice
  • 1 teaspoon salt
  • 4oz button mushrooms, washed
  • 2 green peppers, deseeded and cut into ¾ inch squares
  • 1 teaspoon curry powder or paste of your choice
  • 1 teaspoon white pepper
  • 1 medium onion, very finely chopped
  • 2oz butter, melted
  • 200ml tomato juice

What To Do

  • Mix the prawns in a bowl with the lemon juice and salt. Leave to marinate for 1 hour
  • Pre-heat the oven to 350F/175C
  • Thread the prawns, mushrooms and pieces of green pepper alternately onto skewers
  • Mix the remaining ingredients with the left-over marinade
  • Arrange the skewers in a shallow baking dish, and pour over the sauce
  • Bake in the oven, turning and basting with the sauce occasionally, until the prawns are cooked - about half an hour
