Gabonese Fish in Peanut Sauce

What's the big idea?

Very simple dish that uses ingredients that are always in plentiful supply in Gabon - fish and peanuts. Serve with manioc or fufu if you want to be really authentic, or boiled rice is only slightly less so!

Shopping List

Here's the list of what you need:

  • 4 good sized fish steaks - any firm fish will do
  • 3 tablespoons vegetable oil
  • 3 onions, chopped
  • 2 cloves garlic, crushed
  • 4 large tomatoes, chopped
  • 250ml peanut butter
  • Salt and black pepper, to taste

What To Do

  • Heat the oil in a large wok and fry the fish steaks, onions and garlic until the fish is nicely browned all over
  • Remove the fish from the wok and set aside
  • Reduce the heat, then add 500ml water and the tomatoes to the wok, and simmer for 20 minutes
  • Remove about 200ml of the liquid and mix with the peanut butter to form a smooth paste. Return this to the wok and stir well
  • Return the fish to the wok, season to taste and cook for 10 minutes more, or until the fish is cooked and thoroughly heated through
