Gabonese Mustard Chicken

What's the big idea?

Very simple dish that uses plenty of mustard and onions. If mustard isn't one of your favourite flavours, this dish isn't for you! Serve with rice and steamed green vegetables.

Shopping List

Here's the list of what you need:

  • 8 chicken portiions (legs, thighs, breasts), skin removed
  • 2 tablespoons vegetable oil
  • 1kg onions, finely chopped
  • 3 garlic cloves, minced
  • 8 tablespoons mild, made mustard
  • Juice of 2 lemons

What To Do

  • Heat the oil in a large frying pan and brown the chicken on all sides
  • Remove the chicken and fry the onions and garlic in the same oil for about 10 minutes
  • Transfer the onions to a large oven-proof casserole, add the chicken, mustard and lemon juice
  • Mix well to ensure the chicken is well coated in the mustard, then cover the pot with aluminium foil and then the lid to trap all the steam
  • Cook on very low heat for about an hour until the chicken is cooked through. Serve on a bed of rice
