Equatorial Guinea Spicy Fish Stew

What's the big idea?

Halfway between a soup and a stew - if you prefer it one way or the other, adjust the amount of water. Serve on a bed of rice in large bowls.

Shopping List

Here's the list of what you need:

  • 1lb red snapper fillets (or any firm white fish)
  • 3 medium onions, peeled and sliced
  • 2 large tomatoes, chopped
  • 1 red bell pepper, de-seeded and chopped
  • ¼ teaspoon cayenne pepper
  • 1 red chilli, de-seeded and very finely chopped
  • 1 bayleaf
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • Pinch of dried rosemary
  • 1 tablespoon lemon juice

What To Do

  • In a large saucepan, bring 12fl oz (350ml) water to a boil
  • Add all the ingredients, cover the pot and allow to simmer gently for 1 hour, stirring occasionally
  • Add more water if the mixture becomes too dry
