Cape Verdean Fish Soup:
Caldo de Peixe

What's the big idea?

Being a nation made up entirely of islands, it's no surprise that the Cape Verdeans have plenty of fish soup recipes! This one is fairly typical, but the exact ingredients list will vary depending on what fish and which vegetables are available at the time.

Shopping List

Here's the list of what you need:

  • 2 tablespoons vegetable oil
  • 2 medium onions, finely chopped
  • 1 green pepper, finely chopped
  • 1 red pepper, finely chopped
  • 2 medium tomatoes, finely chopped
  • 4 spring onions, sliced
  • Salt and pepper
  • 6 medium white potatoes, peeled and cut into 1 inch cubes
  • 3 sweet potatoes, peeled and cut into 1 inch cubes
  • 1 bunch fresh parsley
  • 4 fresh saltwater fish fillets, e.g. cod, sea bass, cut into 1 inch cubes

What To Do

  • Heat the oil in a large saucepan and fry the onions for five minutes
  • Add the peppers, tomatoes and spring onions, and continue frying for a further three minutes
  • Add 1 litre of water to and season well
  • Bring to the boil
  • Add the fish, potatoes, sweet potatoes and parsley
  • Lower the heat, cover and simmer for 25 minutes, adding more water if needed
