Burkinabé Yams in Tomato Sauce

What's the big idea?

This is a popular and traditional recipe in Burkina Faso, where it would be served as an accompaniement to a main dish, particularly something simple like grilled fish or roast chicken, both of which are popular.

Shopping List

Here's the list of what you need:

  • 1½kg yams, washed and peeled
  • 2 onions, chopped
  • 6 tablespoons tomato purée
  • 2 hot red chillies, very finely chopped
  • Vegetable oil for frying
  • Salt and freshly ground black pepper, to taste

What To Do

  • Cut the yams into 5mm thick slices
  • Heat a little oil in a wok or large frying pan, add the onions and fry for about 5 minutes, or until lightly browned
  • Stir in the tomato purée and continue frying for a couple of minutes
  • Stir in 300ml water and bring to the boil. Reduce the heat to a simmer
  • Add the yam slices and stir in the chillies. Season to taste
  • Cover and simmer gently for about 30 minutes, or until the yam pieces are tender - add more water if needed
