What's The Big Idea?

It is hard to imagine a simpler dish to cook than this! It's a great and healthy vegetarian option, or vegetable side-dish. Either way, it's no effort to prepare and packed full of goodness!

Shopping List

Here's the list of what you need:

  • 2 tablespoons vegetable oil
  • 1lb fresh spinach
  • 1 large onion, thinly sliced
  • 2 medium tomatoes, chopped
  • 1 green pepper, deseeded and thinly sliced
  • Plenty of salt and pepper

What To Do

  • Heat the oil in a large wok
  • Add all the other ingredients. Reduce the heat to low
  • Cook gently, stirring regularly, for half an hour, or until the vegetables are cooked to your liking
